Raw Zucchini and Carrot Noodles with Avocado Cilantro Sauce



Who doesn't love slurping noodles? This raw recipe is so easy and simple, you won't believe it tastes this good!



Ingredients for noodle base

6 zucchini, made into noodles (spiralized or julienned)

8 carrots, made into noodles

2 baby vidalia onions, sliced thin

Salt and pepper to taste



Directions

Place all of the veggie noodles and onions in large bowl

Salt and pepper to taste



Ingredients for sauce

2 haas avocados

1 cucumber, peeled and sliced

6 cloves of garlic

1 lime, juiced

1 handful cilantro (or herb(s) of your preference)

Salt and pepper to taste



Place all of the ingredients for the sauce in a food processor

Pulse until well blended and fairly smooth


The zucchini and carrots will have produced some liquid because of the salt

Pour out the excess liquid and pat the noodles dry

Pour sauce on noodles and mix well



Voila! Ready to eat and serve! You can top with sprouts and more fresh herbs or onions.
