Sautéed Vegan Zucchini Wrap


I love zucchini, and even though it's not summer, you can still find it in the markets. This time I went grocery shopping, there were a bunch of zucchini in the discount bin, so of course I bought a bunch!

Zucchini has calcium, folate, vitamin A, phosphorus, and all sorts of other vitamins and minerals that are good for our health. Click on the picture above to see complete nutritional information.

This #VeganWrap is so easy to make! This is a fast and easy #lunch that can whipped up in just minutes. Anyone can do it!


Ingredients


6 zucchini, chopped

1/2 medium onion, chopped

1/2 red bell pepper, chopped

1/2 yellow bell pepper, chopped

4 large cloves garlic, grated

1 tsp coriander

1 tsp cumin

1/2 tsp paprika

1/2 tsp dried crushed bay leaves

salt and pepper to tast

lime juice to taste



Directions


Heat pan over medium heat

Once hot, add oil

Add onions, bell peppers, and zucchini and sauté about 5 - 10 minutes

Add garlic and sauté about 5 - 10 minutes more

Add spices and sauté another 10 minutes

Add lime juice and sauté for 5 more minutes


All cone with the veggies!!



Warm up a wrap or tortilla, put some lettuce on it, then some veggies, and top it all off with some guacamole. ¡Delicioso!



These veggies are also great served with rice or on a bed of spinach, and the leftovers are great for making soups or stews!!
