Blueberry Granola Bars



So I had a bunch of frozen blueberries in my freezer. After looking inside the bag, it became apparent that we were all going to be having lots of blueberry themed dishes that week. #VeganGranolaBars are a great fast and easy treat! These are kind of a mix between a granola bar and a rice crispy treat.



Ingredients


1 c oats

1/4 tsp tangerine zest

juice from 1 tangerine


These will take a bit of time to make, but I promise they'll be worth it!


Directions


Combine frozen blueberries, evaporated cane juice, tangerine juice and zest in a saucepan. Simmer until thickened enough to coat the back of a spoon. Let it cool to room temperature.


Melt the marshmallows with coconut oil. (You can do this in a pan on the stove, or in a bowl in your microwave.) Let cool for around 5 - 10 minutes. Stir in blueberry mixture, oats, shredded coconut, and rice crisps.



Spread out on parchment paper in a rectangular 9 x 13 baking dish. Let cool for about an hour.


Once cooled, slice into rectangles and store.


I honestly couldn't tell you how long they will last in storage. I have only been able to keep them around for 4 days at most, and that was because I hid some of them! With these bars, the more I make, the faster they disappear! I would imagine that they'd last a few days in an airtight container on the counter, up to a week refrigerated and maybe a month or so in the freezer.
