Chocolate Covered Peanut Bars | Vegan, Soy Free, Wheat Free

These are so very satisfying, filling, and delicious!! No anecdotes or stories for this one!
Ingredients
1/2 cup peanut butter
1/4 cup coconut sugar
1/4 cup maple syrup
1/4 cup brown rice syrup
1/2 cup dates, processed into a paste in food processor
1 1/2 cups roasted peanuts
2 cups rolled oats, toasted
1/2 cup coconut flakes
1/4 cup hemp seeds
1/2 cup vegan chocolate chips, melted

Directions
Line baking pan with parchment paper
Combine peanut butter, coconut sugar, and syrups in pot and heat over medium low heat
Bring to a simmer and simmer for a few minutes until it thickens
Add processed dates and incorporate well
Then add the peanuts, toasted oats, coconut flakes, and hemps seeds
Spread out on lined baking pan and let cool for at least an hour
Once cooled, pour and spread melted chocolate over top
Let cool, about another hour
Cut into bars and enjoy!

They will last at least about a week in the refrigerator. They may last longer, but I've never been able to keep them around for longer than a week, and that is only possible when I hide them...lol! They do not have to be refrigerated, but if it gets too hot, the chocolate will melt, which is why I always keep them in the fridge.
