Easy 3-Ingredient Carrot Cake Bites | Soy Free, Gluten Free, Vegan

I was running out of supplies in the kitchen...as it always seems. But I wanted to make something sweet. I had a bunch of carrots, much more than usual, dates and a little bit of shredded coconut. I thought I'd give it a go! That's how this recipe was born.
Keep these in your fridge and they'll keep firm enough. Haven't been able to keep them around more than 2 days, so I honestly cannot say how long they will last, but I would guess somewhere around a maximum of 4 days in the fridge.

Directions
Peel or wash carrots very well and grind in high speed food processor with walnuts, coconut, and dates
Shape into balls and roll in shredded coconut until covered all over with coconut
Set aside and chill for at least 2 hours

These are a great after camp snack! The kids will love their cool, sweet taste!! You can add walnuts or pecans to the mix or roll the carrot date balls in some crushed/grated nuts. They're great with pistachios too. You can also try adding some raisins to the figs for different flavor. The possibilities are really endless!
