The Best Rice Crispy Treats! Gluten Free, Soy Free, and Vegan Too!!



When you make these, they'll disappear before you know it! They're great for lunchboxes, or after school/work treats. And these rice crispy treats are easy and budget friendly too.


The ingredients are simple. You probably have some already sitting around your kitchen or pantry.


Ingredients

1/4 cup maple syrup

Pinch of salt (optional)

Cinnamon to taste



Directions

Combine puffed rice, oats, and coconut in a large bowl

In a pan over medium high heat, bring rice & maple syrups to a boil with the vanilla extract, salt (optional), and vegan spread

Continue to boil until reduced to about 3/4 of the original volume

Add marshmallows

Stirring often, make sure it's all well combined

Let cool a few minutes before adding to dry ingredients in bowl

Once you've combined well, add chocolate chips and stir well


Spread mixture in greased baking pan, sprinkle with cinnamon, and let cool completely

Once cooled, cut out your treats and serve
