NO BAKE Vegan Fruit, Nut, & Seed Granola Bars | Wheat-Free, Soy-Free

These no-bake granola bars are nutritious and SO delicious!! Packed full of protein, these fruit, nut and seed granola bars will keep you going strong for hours.
The base is made from dates, nut or seed butter, and syrups. So easy to make, your kids can make them!

Ingredients
1/2 C seed or nut butter (The granola bars pictured were made with Tahini, but I've also made them with almond butter. You can use whatever nut or seed butter you like best. Sunflower seed, Cashew, Peanut...any will work!)
1/4 C maple syrup
1/2 C brown rice syrup
2 C toasted rolled oats (You can toast them in a 350º oven for 10-15 minutes.)
1 C nuts, seeds, & dried fruits (I use whatever trail mix I have on hand for this. For the bars pictured, I used a trail mix that had raw almonds, pistachios, walnuts, brazil nuts, hazelnuts, pumpkin seeds, and craisins. I just pound on the nuts to break them up a bit. I think this will be most kids' favorite part!)
1/2 C dates, processed in food processor into a paste
1/2 C coconut flakes

Directions
Over low to medium heat, warm up the seed/nut butter with the syrups and simmer until it reduces a little and becomes gooey. It will roll off the sides of the pot it is in when you stir it.
Add the date paste and stir until well incorporated.
Add all of the rest of the ingredients and combine well.
Put parchment paper in a square 9x9 pan and spread the mixture out evenly with a spatula.
Let it cool in the refrigerator for about an hour to let it set.
Cut into squares and serve or save!

These can get sticky, so I usually keep them in a container in the fridge. I have taken them on day long trips and they hold together beautifully without refrigeration, they just tend to get sticky if the weather is very hot.
