Vegan Oatmeal Coconut Cookies | Wheat Free, Soy Free

I absolutely LOVE drop cookies, especially oatmeal cookies. These are super simple and easy to make! They are really budget friendly too, since the recipe doesn't call for too many ingredients.

Ingredients
1/2 C vegan shortening
1 C brown sugar
1/4 C maple syrup
1 C flour (I used Bob's Red Mill GF one-to-one blend for the cookies pictured)
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
1 1/2 C rolled oats (Use GF oats to make these GF cookies)
1 C shredded coconut
1/2 C finely diced/chopped dates
2 Tbsp coconut milk

Directions
Preheat oven to 375º
Beat the shortening and sugar for 2-3 mins with hand held mixer
Add Maple syrup and beat with mixer for another 2-3 minutes
Add flour, baking soda, salt and cinnamon and mix by hand until well incorporated
Add oats, coconut, dates and coconut milk
Mix by hand until the last ingredients are pretty well dispersed throughout the batter
Measure by the rounded teaspoon and make round balls
Place on baking pan lined with parchment paper about 1 1/2" apart
Bake for 13 minutes
The cookies will be soft when they first come out, but will become crispy on the outside and chewy on the inside once they've cooled

Cinnamon is one of my favorite flavors, so I like to pair these cookies with some warm cinnamon coconut milk or chai tea. Delicious!!
