Breakfast Delight Cookies

Big favorite with everyone at any time of year!

#GlutnFree, #SoyFree, #Vegan, Oatmeal, Raisin, coconut, Date Cookies!


Can't get enough of this crumbly cookie!!

This is one of my favorite "keep everyone regular without them knowing" recipes. Ha! Within a few hours of eating a couple of these, you'll find yourself seated on the porcelain throne comfortably cleansing your body of toxins and other unnecessaries.


Ingredients:

1/2 c xtra virgin coconut oil

1/2 c coconut sugar

1/2 tsp pure vanilla extract

1 Tbsp coconut milk (any nut/grain milk can be used)

3/4 c coconut flour (any flour can be used)

1/2 tsp baking soda

1 tsp baking powder(#aluminumfree)

1/2 tsp cinnamon

1/2 tsp sea salt

1 1/4 c rolled oats (#glutenfree)

1/2 c raisins soaked*

1/2 c dates chopped and soaked*

1/4 c coconut flakes (#unsweetened)

1/4 c chopped pecans


Remember, any kind of flour or "milk" can be used, each adding it's own flavor and consistency to the cookie.

Directions:

Preheat oven to 350º

Cream coconut oil and sugar

Add vanilla and coconut milk

Blend with hand mixer until smooth and fluffy

Blend flour, baking soda, baking powder, salt and cinnamon separately

Add dry ingredients to wet ingredients

Blend util well combined

Sir in oats, drained raisins and dates, coconut flakes and pecans

Make small balls with 1 tbsp of dough each

Flatten and place on baking sheets 1/2" apart

Bake 10 - 15 minutes

Pull out of oven when brown on the edges and let cool another 10 - 15 minutes


With coffee for a small pick me up, you cannot go wrong!!
