Peanut Butter Cookies

Simple, easy, and quick peanut butter cookies. This is a #1bowlrecipe!!

No one will EVER guess that this cookie is Vegan, Gluten-Free, and Soy-Free, it is SO very delicious and crispy on the outside and moist and chewy on the inside!

You already know that when I find myself at the grocery store, I go to the discount areas first. Well, this time I found a FABULOUS treasure! A plethora of jars of organic, natural #peanutbutter, crunchy and creamy. So many dishes ran through my mind! From West African Ground Nut Vegetable Soup to these delicious #PeanutButterCookies, we will definitely be making them all in the XpressKitchen!


Peanuts are so great and versatile! From sweet to savory dishes, peanuts make an excellent theme for any dish!

I think I'll start with dessert!

This #GlutenFree, #SoyFree, #Vegan, Peanut Butter Cookie is so delicious! They turn out thin and dark like a gingersnap because of the dark brown sugar, crispy on the outside, and moist and chewy on the inside. You cannot have just one!

Oh, and they are great for making ice-cream sandwiches in the summer time!


Ingredients:

1 C crunchy, natural peanut butter*

1 1/2 tsp baking soda

1/3 C gluten free flour blend of your choice

1 C dark brown sugar

1/4 tsp sea salt

1/2 C unsweetened #applesauce*

1 tsp vanilla


3 Tbsp natural sugar

* If your peanut butter is sweetened, lessen the amount of sugar by up to 1/4 C * If your apple sauce is sweetened, lessen the amount of sugar by up to 2 Tbsp

Directions:

Combine all dry ingredients in a bowl and mix well

Add peanut butter, apple sauce, and vanilla

Stir well until everything is well incorporated

A soft dough will form

Form into 1" balls and refrigerate for at least an hour**


** Refrigerating the dough will help the cookie come out crispy on the outside and moist and chewy on the inside. You can also just freeze the dough balls. They should last up to a month in the freezer in an airtight container.

Preheat oven to 375º

Roll half of the dough ball in the natural sugar

Arrange dough balls on lined cookie sheets approximately 1 1/2" apart, with sugared side up

Flatten with fork or spoon

Bake for 8 minutes


Let them cool for 10 - 15 minutes before enjoying.

They are delicious on their own or paired with hot chocolate, coffee, or a warm plant-based "milk" to help fend off the cold! Enjoy!
